Yellow fine sole is a tasty fish with nice white meat. The texture of the meat of the fish remains firm after cooking and is soft. A fine "fish" that comes out best in a "meuniere" (lemon/parsley) coating.
Nicely rolled, whether or not combined with a piece of salmon, an ideal addition to any festive meal.
