Atlantic wolffish - Anarhichas lupus

Wild caught in the Northeast Atlantic, Iceland.
The fish meat is lean, very firm, does not fall apart easily and has an excellent flavour, which allows the wolffish to be prepared in many ways. 
The fish meat can be fried, marinated, poached, stewed and roasted.
